Wilbur steps down as a head writer for the server to focus on his music career. It wasn't until Wilbur announced this on Twitter that people didn't realize it was scripted, even somewhat. But it wasn't scripted in the sense that everyone wrote out their lines ahead of time and practiced them, it was scripted in the sense that DND sessions are. There is an end point for the players to reach, hitting story elements and beats along the way and using improv skills to fill in the rest. Many of the iconic lines from the SMP are still improv in nature.
That being said, Eret's betrayal at the beginning of L'manberg was a complete surprise to Wilbur, Tommy, Tubbo, and Fundy. Their reactions are genuine as it wasn't planned at all from their end. Ultimately, though, this would be the spark of inspiration for Wilbur to write a loose plotline for him and his friends to follow.
The three lives system was shortly implemented after the Season One finale after a theory posted on Reddit made its course. This is why there is a higher number of canon deaths in the first season compared to later seasons.
The L'manberg election results was left entirely up to audience vote. I'm sure Wilbur pulled some strings behind the scenes to make it a closer and more exciting race when he got the results, but until all votes were cast, they really had no idea who was going to win. Because of this, there were multiple plotlines written depending on who won the election. If Wilbur and Tommy won, Wilbur was written to become the dictator in place of Schlatt and go mad with power and control within his nation. He would have thrown Schlatt into prison for trying to undermine his authority. In this alternate timeline, Schlatt could have been the underdog and Wilbur the big bad villain.

Some fun trivia from the time includes Tubbo when he was a spy in Manburg. Of course he was caught multiple times leaving Manburg to go to Pogtopia. However, he had an excuse, that he was pregnant and Tommy was his gynecologist. I remember posts joking that the Manburg festival was an elaborate abortion. I just thought that was a funny and weird bit that stuck out to me.
Another funny bit was that George, despite living in the UK and being able to stream during the hours that others were streaming at, often missed big events like the election and the festival because of his poor sleep schedule. He continued the bit by building a hobbit house during the battle and subsequent destruction of L'manberg.
Wilbur technically has a president's outfit that he never wore since he went from wearing his L'manberg uniform to his Pogtopia outfit. It's said that he passed this suit down to Tubbo.
Season Two was very, very condensed down. Compared to the roughly five real-world months that Season One took place over, Season Two took place over two months. Most creators would stream everyday and they would stagger their streams to create a stream train of sorts. Tommy and Tubbo would stream about the same time, then the American streamers would have their streams, and then there would be late-night silly goofing off streams that acted as a sort of break from the more serious streams (until they weren't, lol).
This is where a lot of the lore/canon language comes into play. Now that the audience knew that the SMP was scripted, there was more focus both from the audience and from the content creators that the story was the important factor here, not goofing off with your friends. If creators wanted to joke around and just play Minecraft with their friends on the server, they often later stated that the stream was noncanonical. If it was a serious event, "lore" would often get put in the title to let their audience know that this stream was serious and meant business. This also created the title of "semi-lore" where the streamer was technically in character the whole time but doing something mundane like building or mining and monologuing to their audience.
This was also when the Dream SMP started to gain a lot of traction very quickly. It was blowing up and pushed into the limelight of the internet for the first time. This allowed other creators to start plotlines of their own and gain popularity despite never interacting with the "Main" story involving Tommy, Tubbo, Wilbur, and L'manberg.
For sake of continuity and understanding, Season Two's story may not be told in real-world chronological order here. However, all big plotpoints will be covered in due time.
